Cheesy Bacon Chicken Recipe

This recipe is a family favorite, and once you try it, it might just become yours too!

Ingredients:

  • 3 large boneless, skinless chicken breasts
  • 6 slices of thick-cut bacon
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • 1/3 cup chopped green onions for garnish

Instructions:

  1. Preheat the oven:
Set your oven to 350°F (175°C) and allow it to preheat while preparing the chicken.
  2. Prepare the chicken:
Cut each chicken breast in half lengthwise, creating 6 smaller pieces. Season both sides of each piece with salt and pepper according to your preference. Place the chicken in a baking dish and bake for 25 minutes.
  3. Cook the bacon:
While the chicken is baking, cook the bacon in a skillet over medium heat. Fry the bacon until most of the fat has rendered, but before it becomes too crispy, as it will continue cooking in the oven.
  4. Assemble the chicken and bacon:
After 25 minutes of baking, remove the chicken from the oven. Cut each slice of bacon in half, and place two pieces on top of each chicken breast.
  5. Bake with bacon:
Return the chicken to the oven and bake for an additional 10 minutes to allow the bacon to cook fully and infuse the chicken with its flavor.
  6. Add cheese:
Remove the chicken from the oven once again, sprinkle a generous amount of shredded cheddar cheese over each piece. Return to the oven for another 5 minutes, or until the cheese is fully melted and bubbly.
  7. Finish with green onions:
Once the cheese has melted, remove the chicken from the oven and sprinkle chopped green onions on top for a fresh burst of flavor.

Tips:

  • For an extra kick, add a sprinkle of smoked paprika or chili powder before baking the chicken.
  • Serve with a side of mashed potatoes, steamed veggies, or a crisp salad.
