Ingredients:
- 1 can (28 oz) whole tomatoes with juice
- 2 cans (10 oz each) Rotel diced tomatoes and green chilies
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 1 whole jalapeño, quartered and sliced thin
- 1/4 teaspoon sugar
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon ground cumin (optional, for extra depth)
- Juice of 1 lime
- 1/4 cup fresh cilantro, chopped
Instructions:
- Blend the Ingredients
- In a food processor or blender, combine whole tomatoes (with juice), Rotel tomatoes, chopped onion, garlic, jalapeño, sugar, salt, and cumin (if using).
- Pulse to Desired Consistency
- Pulse the mixture several times until you reach your preferred salsa texture—chunky or smooth.
- Add Lime and Cilantro
- Stir in lime juice and fresh cilantro.
- Adjust Seasoning
- Taste and adjust salt, lime, or heat levels as needed.
- Chill and Serve
- Let the salsa sit in the fridge for at least 30 minutes to allow flavors to meld. Serve chilled with tortilla chips or as a topping for tacos, burritos, or grilled meats.
Bonus Tips:
- For extra heat, add another jalapeño or leave the seeds in.
- If you prefer a milder salsa, remove the seeds from the jalapeño before adding.
- Storing in an airtight container will keep the salsa fresh for up to a week in the refrigerator.
Enjoy this homemade salsa with your favorite Mexican dishes!
