Delicious and Hearty Cabbage Soup Recipe
Ingredients:
- 1 large cabbage, chopped
- 2 small onions, diced
- 2 cans of stewed tomatoes
- 3 cloves of garlic, minced
- 1 tablespoon olive oil
- 6 cups vegetable broth
- Salt and pepper to taste
- 1 teaspoon paprika
- 1 teaspoon thyme
- Fresh parsley (optional, for garnish)
Instructions:
- Sauté the onions and garlic:
In a large pot, heat the olive oil over medium heat. Add the diced onions and sauté for about 5 minutes until they become translucent. Add the minced garlic and cook for another minute, stirring constantly. - Add the cabbage:
Stir in the chopped cabbage and cook for about 5-7 minutes until it begins to soften. - Add tomatoes and broth:
Pour in the cans of stewed tomatoes (with their juices) and vegetable broth. Stir to combine the ingredients well. - Season the soup:
Add salt, pepper, paprika, and thyme. Bring the mixture to a boil. - Simmer:
Once boiling, reduce the heat to low, cover the pot, and let the soup simmer for about 25-30 minutes, or until the cabbage is tender and flavors have melded. - Serve:
