Delicious and Hearty Cabbage Soup Recipe

Ingredients:

  • 1 large cabbage, chopped
  • 2 small onions, diced
  • 2 cans of stewed tomatoes
  • 3 cloves of garlic, minced
  • 1 tablespoon olive oil
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • Fresh parsley (optional, for garnish)

Instructions:

  1. Sauté the onions and garlic:
    In a large pot, heat the olive oil over medium heat. Add the diced onions and sauté for about 5 minutes until they become translucent. Add the minced garlic and cook for another minute, stirring constantly.
  2. Add the cabbage:
    Stir in the chopped cabbage and cook for about 5-7 minutes until it begins to soften.
  3. Add tomatoes and broth:
    Pour in the cans of stewed tomatoes (with their juices) and vegetable broth. Stir to combine the ingredients well.
  4. Season the soup:
    Add salt, pepper, paprika, and thyme. Bring the mixture to a boil.
  5. Simmer:
    Once boiling, reduce the heat to low, cover the pot, and let the soup simmer for about 25-30 minutes, or until the cabbage is tender and flavors have melded.
  6. Serve:
    Taste and adjust seasoning as needed. Ladle the soup into bowls and garnish with fresh parsley if desired.

Tips:

  • For a heartier version, you can add beans or potatoes.
  • This soup can be stored in the fridge for up to 4 days and freezes well for later use.
